Black quinoa is a rare variety preferred for salads because it retains its integrity when cooked. It is rich in minerals, fiber and protein, containing all essential amino acids. It does not contain gluten and has a slightly sweet taste.
Soak the quinoa in water for about 5 minutes. Wash it several times and strain. Mix one part quinoa with two parts water and cook for about 15-20 minutes.
