CHILDREN'S ICE CREAM MELBA

This fun ice cream sundae is the perfect treat for kids and they'll never know it's made with healthy ingredients! This ice cream melba is dairy-free and made without refined sugar, preservatives, artificial or natural flavors commonly found in ice creams. You can make this ice cream treat with or without coconut cream and you can replace the sticks with berries if you can't find clean sticks or just don't have any on hand. In both cases, the taste will be fantastic.

Bananas soothe the lining of the intestinal tract and also soothe the nerves associated with the intestinal tract.

Raspberries are rich in antioxidants that remove free radicals from the organs and bloodstream.

Ingredients:

Banana Ice Cream:

  • 4 frozen bananas;
  • 1 tsp vanilla powder or alcohol-free vanilla extract;
  • 2-3 tbsp. water or unsweetened almond milk.

Date syrup (or store-bought substitute):

  • 1/2 cup pitted dates;
  • 1 cup of warm water;
  • 1/2 tsp. vanilla powder or 1 tsp. alcohol-free vanilla extract.

To serve:

  • 1/4 cup pure raspberry jam without citric acid, added sugar or preservatives;
  • 1/3 cup coconut whipped cream (optional);
  • 2-3 tbsp. clean chopsticks (optional)
  • 2 cherries.

Method of preparation:

To make the banana ice cream, blend the frozen bananas and vanilla in a food processor. Mash the bananas until smooth, adding warm water or almond milk with a spoon to prevent sticking. Place in an airtight container in the freezer to set for 3-5 hours.

To make the date syrup, combine the dates, water, and vanilla in a high-speed blender. Blend until smooth, scraping down sides as needed.

To make the optional whipped cream, chill the mixing bowl in the freezer for 10 minutes. When the bowl has cooled, remove the heavy cream from the top of the can, leaving the coconut water. Using a stand mixer, whip the cream for 2-3 minutes until soft peaks form. Add the honey and beat for another 2 minutes.

Scoop the ice cream into serving glasses and garnish with raspberry jam, date syrup (optional), coconut cream (optional), popsicle sticks (optional) and cherries. Serve immediately.

Portion for 2 people.
