CAULIFLOWER AND GREENS BOWL

This recipe only takes a few minutes and is extremely easy to make. The salad can also serve as a filling for lettuce leaf tacos. In both cases, it is delicious and full of nutrients. You can customize the recipe to your taste by choosing from the ingredients as desired or adding your favorite herbs and spices.

FOR THE CAULIFLOWER
- 1 medium-sized head of cauliflower, cut into florets;
- 1 tsp chopped green onions;
- 1 tsp diced tomatoes;
- 1/4 tsp. compactly collected fresh coriander, finely chopped;
- 3/4 tsp. finely chopped asparagus;
- 1/2 tsp. ginger powder (optional);
- 2 tsp dried basil (optional);
- 1 clove of garlic, finely chopped (optional);
- 1/2 to 1 tsp. red pepper flakes, to taste (optional);
- 1 tsp Atlantic Dulce Flakes or more to taste (optional);
- juice of 2 medium-sized oranges or 2 pitted dates.
FOR THE BASE OF THE SALAD
- 8 p.m. green leafy vegetables of your choice (eg romaine lettuce, lettuce, spinach and/or thyme, etc.), chopped;
- juice of 1 orange or 1/2 lemon.
Method of preparation:
Place the cauliflower in a food processor along with the dates (if using) and pulse until rice-like crumbs are formed. Pour into a large bowl. Add the chopped green onions, tomatoes, cilantro, asparagus, and (if using) ginger powder, dried basil, garlic, chili flakes, dulce scallions, and orange juice to the bowl. Stir well.
Arrange the green leafy vegetables in bowls and pour freshly squeezed orange juice over them. Top with cauliflower rice and serve.
Portion for 1-2 people.
