Mushroom & Herb Millet Risotto

If you're a risotto fan, try this advanced version made with millet, which is a better grain than rice when it comes to healing people. In addition, millet is tastier because of its slightly nutty taste. Mushrooms, onions, garlic and herbs add healing nutrients and flavor to this dish, which is best eaten for dinner with a green salad.

Ingredients:

  • 1 medium-sized onion, finely chopped;
  • 1 1/2 tsp. thinly sliced ​​mushrooms*;
  • 2 cloves of garlic, finely chopped;
  • 1 tsp millet;
  • 1 tsp paprika;
  • 1 tbsp. fresh thyme;
  • 1 tbsp. fresh oregano;
  • 3-4 tsp. medicinal broth or water;
  • 1 tsp loosely picked fresh parsley and/or basil, finely chopped;
  • 1/4 tsp. sea ​​salt (optional).

Method of preparation:

Place a large, nonstick ceramic pot over medium-high heat. Add the onion and mushrooms and cook for 3 to 5 minutes until softened.

Add the garlic and cook for another 2-3 minutes. Reduce heat to medium-low.

Add the millet, red pepper, thyme, oregano, and 1 cup of the medicated broth or water. Stir until evenly mixed. Cook for 17-20 minutes, stirring every few minutes and adding more medicated stock or water if needed.

When the millet is cooked, stir in the fresh parsley or basil. Add the sea salt (if using) and stir.

Serve immediately.

*For mushrooms, wash and rinse thoroughly with warm to hot water before slicing. Do not use sticky or rotting mushrooms. This is a sign of oxidation and spoilage.

Portion for 2-3 people.
