CAULIFLOWER SUSHI WITH THAI CHILI SAUCE

This dish can be prepared with either raw or cooked cauliflower rice. While the thought of making your own sushi might scare you, it's actually surprisingly easy. It doesn't have to look perfect to be delicious. The possibilities for filling sushi rolls are endless. Try incorporating fresh herbs like mint, basil, and cilantro for a fresh twist, or turn to other liver-healing vegetables like radishes, asparagus, or sprouts. You can even include cooked vegetables like sweet potatoes or squash.

Cauliflower: A nutrient-dense vegetable that is excellent for maintaining a strong immune system and optimal health. Cauliflower is incredibly high in vitamin C, K and B-complex and minerals such as boron, calcium, molybdenum and tryptophan. It is also a good source of high-quality proteins that are easily absorbed by the body. Cauliflower contains powerful anti-cancer compounds such as indole-3-carbinol and sulforaphane, which are particularly useful in preventing breast, cervical, ovarian, colon, stomach and prostate cancers.

Cucumbers: Allies of the liver due to their ability to hydrate it. Your liver always needs living water that is full of minerals and other nutrients because the liver keeps your blood hydrated. He relies on sources like cucumbers for this living water. This minimizes the dirty blood syndrome by helping to reduce the fats and toxins in it. Phytochemical compounds in cucumbers act as anti-inflammatory agents for the small intestine and colon. Cucumbers also have the ability to thin the blood, which allows detoxification to proceed naturally, without obstacles.

Ingredients:

  • 1/2 cauliflower;
  • 6 pcs. nori leaves.

CHARGE OF CHOICE

  • 1 cucumber, cut into thin strips;
  • 1 carrot, cut into thin strips;
  • 1 red pepper, cut into thin strips;
  • 1 cup thinly sliced ​​red cabbage;
  • 1 avocado, cut into thin strips;
  • 1/2 cup of water.

THAI CHILI SAUCE 

  • 1 cup cherry tomatoes;
  • 1 cup cold water or freshly squeezed orange juice;
  • 1/4 cup sun-dried tomatoes;
  • 1 clove of garlic;
  • 2 tbsp. lemon juice;
  • 2 tbsp. raw honey;
  • 1/4 tsp. red pepper flakes;
  • 1 tbsp. ground Thai red chili or ripe jalapeño.

    Method of preparation:

    Cut the cauliflower into florets (about 6 florets should be obtained). Place them in a food processor and puree until a rice-like texture is obtained. Place the cauliflower rice in a medium bowl and set aside.

    If you prefer to have cooked cauliflower rice, sauté the cooked cauliflower in a sauté pan over medium heat, stirring frequently, for 5-7 minutes until tender. You don't need to add oil or water to the pan, as the cauliflower itself needs to stay moist enough not to stick. When the cauliflower rice is tender, set it aside in a medium bowl to cool.

    Place one sheet of nori on a cutting board. Pour about 3/4 cup of cauliflower rice onto the edge of the nori sheet closest to you and spread it in an even layer covering the bottom half of the nori. Arrange desired filling vegetables in center of cauliflower rice.

    Carefully lift the nori sheet from the bottom edge near you and begin to roll it tightly towards the top. Just before you finish rolling, dip your finger in water or orange juice and run it along the top edge of the leaf. This will help the nori sheet to stick as you finish rolling. Using a sharp knife, cut each sushi roll into even pieces.

    To make the Thai chili sauce, mix the fresh tomatoes, water, sun-dried tomatoes, garlic, lemon juice, honey, and red pepper flakes together with up to 1 Tbsp. ground Thai red chili or jalapeño depending on desired spiciness.

    Portion for 2 people.
