There's nothing better than apple pie! Unless it's fat-free, gluten-free, and dairy-free apple pie, which means you can enjoy it whenever you want! The cinnamon apple filling and maple crumb topping bake in the oven and fill your home with comforting, nostalgic aromas that feel like a warm hug. Ingredients:
Dough:
- 2 cups gluten-free oat flour ;
- 1/2 cup tapioca starch ;
- 1/2 cup applesauce ;
- 2 tbsp. pure maple syrup .
Filling:
- 7 cups peeled and cored apples, cut into slices;
- 1/2 tsp. coconut sugar ;
- 2 tablespoons potato starch;
- 1 tsp ground cinnamon .
Crumb topping:
- 3/4 cup gluten-free oat flour ;
- 3/4 cup brown rice flour;
- 1/3 cup pure maple syrup .
Method of preparation:
Preheat oven to 180°C. In a bowl, combine the gluten-free oat flour and tapioca starch . Mix until well combined. Add the applesauce and pure maple syrup and mix until you have a soft, non-sticky dough. Add more oat flour or applesauce if necessary to achieve this consistency.
Roll out the dough between two sheets of parchment paper, then transfer it to a pie pan. Use your hands to press the dough evenly against the bottom and sides of the pan. You can use a glass to level the bottom. Prick the dough several times with a fork. Refrigerate while you prepare the next steps.
To make the crumb topping, combine the oat flour and brown rice flour in a small bowl. Mix well, then pour in the pure maple syrup . Rub the syrup into the dry ingredients until you have a crumbly mixture. Set aside.
To make the filling, combine the apple slices, coconut sugar , potato starch, and cinnamon in a very large bowl. Stir until evenly coated.
Remove the dough from the fridge and arrange the apple slices tightly in the pie dish. Sprinkle with crumbs on top and bake for 30 minutes until the crust is browned, then cover and bake for another 30 minutes until the apples are cooked through.
Chill for at least 1 hour, then serve.
