SALAD OF BRUSSELS SPROUTS, ASPARAGUS, RADISHES AND APPLE
Slightly sweet and slightly spicy, this salad is bright, light and full of flavor. Raw Brussels sprouts, asparagus, radishes and apples energize both the liver and other organs. The salad retains its qualities even if stored in the refrigerator.

Ingredients:
  • 1/2 kg. Brussels sprouts, ends cut off, grated or thinly sliced;
  • 1/2 kg. asparagus, with ends cut off, cut into thin rounds;
  • 1/2 tsp. Radishes, cut into thin slices;
  • 1 medium red apple, cut into very thin slices.
Sauce:
  • 1 clove of garlic, finely grated;
  • 1 tsp finely grated red onion;
  • 1 ½ tsp. raw honey or pure maple syrup ;
  • 3 tbsp. fresh lemon juice.
Method of preparation:

In a large bowl, combine the Brussels sprouts, asparagus, radishes and apple. Mix well and set aside.

In a bowl or jar, make the sauce by mixing together the garlic, onion, honey (or maple syrup) and lemon juice. Pour over the salad and toss.

Divide into bowls and serve.

Portion for 1-2 people.
