STEW WITH SWEET POTATOES AND ZUCCHINI
Stews are always soothing. This recipe combines sweet potato and zucchini to give you a delicious and liver-healthy dish to enjoy alone or with loved ones. The stew is wonderful both as a separate dish and in combination with a fresh salad.

Sweet Potatoes: Sweet potatoes have phytochemical properties that soothe a heated, angry, stagnant, sluggish and toxic liver and help prevent spasms. They also offer a number of phytochemicals to balance hormones in the liver, which uses sweet potatoes and sweet potatoes to regulate and control some of its hormonal functions.

Zucchini: Zucchini has a soothing effect on the walls of the intestinal tract, pushing out pathogenic microorganisms such as bacteria and fungi, allowing better absorption of nutrients that can be sent to the liver. Zucchini is a good food for the gallbladder as it contains phytochemicals that actually reduce inflammation of the gallbladder.

Ingredients:
  • 1 tsp onion, chopped;
  • 2 1/2 tsp. sweet potatoes, diced;
  • 3 cloves of garlic, crushed;
  • 2 1/2 tsp. Zucchini, cut into cubes;
  • 1 tsp ground cumin ;
  • 1 tsp ground coriander;
  • 1/2 tsp. turmeric ;
  • 1 tsp paprika ;
  • 1/2 tsp. red pepper flakes;
  • 1 tsp diced tomatoes;
  • 2 tbsp. tomato puree (without additives);
  • 1 tsp Hot water;
  • 1/4 tsp. fresh coriander, coarsely chopped, for garnish.
Method of preparation:

In a saucepan over medium-high heat, put the onion, sweet potato and garlic. Cook for 3-5 minutes until the onion softens. If the vegetables stick, add a little water.

Add the zucchini, spices, tomatoes, tomato paste and the cup of hot water. Stir well. Cover, reduce heat and simmer for 10 minutes. Remove the lid and cook for another 10 minutes until the stew thickens.

Serve the dish sprinkled with fresh coriander.

Portion for 2 people.
