This beautiful salad is a true feast for the eyes. Made from simple yet colorful and fresh vegetables, it is a great choice when you have leftover cabbage and carrots in the fridge and are wondering how to use them. The coleslaw is delicious immediately after preparation, but it can become even better after the vegetables have sat in the dressing for a while, allowing them to absorb the flavors and soften. This makes it an excellent option for a packed lunch or for a meal the next day.
Fresh raw cabbage contains an incredibly powerful sulfur compound that can reach the thyroid gland and help destroy viruses such as Epstein-Barr. This sulfur compound in fresh cabbage can also penetrate the liver, spleen, and pancreas, helping to destroy and cleanse various other pathogens.
Ingredients:
- 3 cups finely shredded red cabbage;
- 3 cups finely shredded white cabbage;
- 2 cups grated carrots;
- ½ cup loosely packed fresh cilantro leaves, finely chopped;
- 1 tbsp finely chopped well-ripened jalapeño pepper;
- ⅓ cup chopped fresh green onions (green parts only);
- ⅓ cup raw pumpkin seeds (optional).
For the dressing:
- 3 tbsp freshly squeezed lemon juice;
- 2 tbsp raw honey;
- ½ garlic clove, finely grated;
- ¼ tsp cayenne pepper;
- sea salt to taste (optional).
Instructions:
Place the finely shredded red and white cabbage and the grated carrots in a large bowl.
Add the chopped cilantro leaves, jalapeño pepper, green onions, and pumpkin seeds (if using). Mix well so that all ingredients are evenly distributed, and set the bowl aside.
In a small bowl, combine the freshly squeezed lemon juice, raw honey, grated garlic, cayenne pepper, and sea salt (if using). Whisk until the mixture is uniform.
Pour the dressing over the vegetables and toss gently so that all ingredients are evenly coated.
Taste the salad and adjust the seasoning if necessary by adding a little more lemon juice, honey, cayenne pepper, or salt until you reach the desired balance of flavors.
Transfer the salad to a suitable serving bowl or platter and serve immediately.
Serves 4-6 people.
Notes:
- You can adjust the amount of jalapeño pepper and cayenne pepper according to your preference. If you do not like spicy food, reduce the amounts or omit them entirely.
- Although the addition of high-quality sea or rock salt is optional, the recipe is more healing without salt. Over time, you can gradually reduce the amount or eliminate it completely.
