This wonderful creamy dip is a delicious way to include more leafy greens, medicinal herbs, asparagus, and other valuable foods in your diet. It's suitable for raw vegetables, for serving in lettuce leaves, as a dip with steamed potatoes or sweet potatoes, and can also be consumed on its own as a healing raw soup.
Asparagus helps to alkalize the body by assisting in the removal of excess acids. Spinach also contributes to creating an alkaline environment in the body. Additionally, it provides easily digestible trace elements that nourish the nervous system and contains mineral salts that provide vital electrolytes for the brain.
Ingredients:
- 1½ cups raw asparagus, cleaned and roughly chopped;
- 5 cups tightly packed fresh spinach;
- ½ cup cherry tomatoes;
- 1 clove garlic, roughly chopped;
- 2½ tbsp freshly squeezed lemon juice;
- ¼ cup fresh cilantro leaves;
- ¼ cup fresh basil leaves;
- 1 tbsp raw honey or 2 pitted Medjool dates;
- ¼–½ tsp cayenne pepper or red pepper flakes.
For serving:
- slices of sweet pepper (red, yellow, or orange);
- cucumber slices;
- carrot sticks;
- celery sticks;
- lettuce leaves (butter lettuce, red, green, or Romaine lettuce).
Instructions:
Place the asparagus, spinach, cherry tomatoes, garlic, lemon juice, cilantro, basil, raw honey (or dates), and cayenne pepper in a food processor. Blend for 2-3 minutes until you achieve a smooth and creamy mixture, leaving a very slight texture. If necessary, stop the appliance and scrape the mixture from the sides of the bowl.
Serve immediately with raw vegetables or in lettuce leaves. The dip is also great as a garnish for steamed potatoes or sweet potatoes. You can also serve it as a cold raw soup, fill bell pepper halves or hollowed-out tomatoes with it, or serve it over baked potatoes.

Notes:
- You will get the best results if you use a food processor, as it gives the dip a creamy consistency with a light texture. If you don't have one, you can also use a blender. The consistency will be slightly different, but the taste will remain just as wonderful.
