Ingredients:
- 1 large ripe banana (about 1/2 cup mashed);
- 1 cup of gluten-free oatmeal;
- 1 tsp cinnamon ;
- 1/4 cup cranberries or raisins (optional).
Method of preparation:
Preheat the oven to 180°C. Line a medium-sized pan with a baking sheet.
Place the banana in a medium bowl and mash it with a fork. Add the oats, cinnamon and blueberries or raisins, whichever you chose. Mix until a uniform dough-like mixture is obtained.
Scoop a ball out of the mixture using a spoon – you should get about 8 equal sized balls. Place them on baking paper and flatten them slightly using the bottom of a glass to take the shape of biscuits.
Place the cookies in the oven and bake for 15 to 20 minutes, until browned on both sides. Cool them completely before consuming.
Portion for 8 biscuits.
