These mini apple pie bites are amazing. They are a crowd pleaser and a great addition to any birthday or special occasion. But you can enjoy them anytime, even as a snack. Don't let the addition of rosemary fool you—it takes this dessert to new heights.

Ingredients:

  • 2 cups apple, chopped into large cubes;
  • 1 cup apple, chopped into small cubes;
  • 3 cups dates;
  • 1/2 cup walnuts;
  • The juice of 1 lemon;
  • 1/2 cup fresh coconut meat;
  • 1 tsp rosemary;
  • 1/2 tsp ginger ;
  • 1/4 tsp. sea ​​salt ;
  • 1/4 tsp cinnamon .

Method of preparation:

For the marshmallows, process 1/2 cup walnuts with 2 cups dates, sea salt, and rosemary. Line a mini muffin tin with foil and press the marshmallow mixture against the sides of each tin to form small pie cups. Cover and place in the freezer.

For the filling, blend 2 cups diced apple, 1 cup dates, juice of 1/2 lemon, ginger, and cinnamon in a food processor until combined. Stir in 1 cup diced apple. Spoon mixture into each pie dish.

For the coconut cream topping, blend the coconut meat and remaining lemon juice until smooth. Top each apple pie with a dollop of coconut cream and sprinkle with chopped rosemary. Enjoy!
