This healing salad helps reduce and purify acids from the brain and cerebrospinal fluid. It also helps create alkalinity in all body systems.
Ingredients:
- 1 tsp. compactly gathered parsley, coarsely chopped;
- 1 tsp. compactly picked coriander, coarsely chopped;
- 2 cups tightly packed spinach, coarsely chopped;
- 2 cups compactly packed kale, finely chopped;
- 2 cups compactly packed arugula, coarsely chopped;
- 4-6 cups compactly packed red or green lettuce, chopped;
- 1 ½ cups fresh or steamed green peas;
- 1 ½ cups thinly sliced cucumber;
- 1 cup sprouts or microgreens.
Dressing:
- 1 cup freshly squeezed orange juice;
- 2 tablespoons freshly squeezed lemon juice;
- 2 tablespoons raw honey;
- 1 sprig of fresh rosemary, leaves only;
- ¼ tsp cayenne pepper or more, to taste.
Method of preparation:
Combine all the salad ingredients in a bowl. Toss lightly and set aside.
Combine the dressing ingredients in a blender and blend until smooth. Strain through a fine-mesh sieve into a small bowl or pitcher.
Pour the dressing over the salad. Toss lightly and serve immediately.
Serving size for 2-3 people.
