SPRING SALAD

This spring salad of leafy greens and vegetables is fresh and bright, with a very crunchy and pleasant texture. The dressing is creamy thanks to the zucchini, and the tahini (sesame tahini) adds extra creaminess and flavor.

Peas contain easily digestible medicinal phytochemical compounds and carbohydrates, as well as an abundance of chlorophyll, which is easily absorbed in the intestinal lining.

Cucumbers aid digestion. They contain undiscovered coenzymes that will one day be called talaphins. Along with enzymes already known to medicine (such as erepsin), talaphins support the body's protein digestion process so you can get the most out of everything you eat.

Green leafy vegetables create true alkalinity in the body's systems, especially the lymphatic system, which can become the most acidic system due to the entry of chemicals, acids, plastics, pesticides, toxic heavy metals and pathogens into the lymphatic system.

Ingredients:

  • 2 cups (60 g) baby spinach;
  • 2 cups (80 g) chopped romaine lettuce;
  • 1/2 avocado, sliced ​​(optional);
  • 4-5 radishes, thinly sliced;
  • 1/2 cup pea sprouts;
  • 1/4 cup fresh green peas;
  • 1/2 cucumber, thinly sliced;
  • 4-5 cherry tomatoes, cut in half;
  • 1/4 cup (25 g) thinly sliced ​​or shredded red cabbage.

Other garnish options:

  • Sprouts;
  • Micro vegetables;
  • Chopped carrots;
  • Onions;
  • Red/orange/yellow peppers;

Dressing:

Method of preparation:

Make the dressing by combining the zucchini, maple syrup , turmeric , lemon juice, garlic, tahini , mustard powder, pip e ra cayenne , sea salt , black pepper (optional), and water in a high-speed blender and blend until smooth. Set aside.

Place the spinach, romaine lettuce, avocado, radishes, pea sprouts, green peas, cucumber, tomatoes, red cabbage, and any other toppings you want to use in one large or two medium-sized serving bowls.

Add the dressing a few tablespoons at a time and toss until evenly coated.

Best served immediately.

Portion for 1-2 people.
