SWEET POTATO NOODLES WITH GARLIC, RED PEPPER, AND ASPARAGUS

You've probably heard of or tried zucchini or even pumpkin noodles, but have you tried sweet potato noodles? They are delicious and unusual! In this recipe, combined with asparagus, garlic and red pepper, they become a healthy dish that is a feast for the eyes.

Sweet potatoes: are an important glucose and glycogen storage food for the liver. All sweet potatoes and yams are good, even white sweet potatoes. Sweet potatoes have phytochemical properties that soothe a heated, angry, stagnant, sluggish and toxic liver and help prevent spasms. They also offer a number of phytochemicals to balance hormones in the liver, helping it to regulate and control some of its hormonal functions.

Asparagus: provides an abundance of flavonoids that act like natural aspirin and soothe a hot, congested, struggling liver. The liver's ability to cleanse itself is greatly enhanced by this calming effect. Asparagus helps move fat cells by flushing them out of the liver.

Ingredients:

  • 700 g of sweet potatoes (about 4 cups of noodles);
  • 400-500 g of asparagus, cleaned and chopped;
  • 2 cloves of garlic, crushed;
  • 1/2 tsp. red pepper flakes (optional);
  • 1 medium red pepper, cored and thinly sliced;
  • 1 tbsp. lemon juice.

Method of preparation:

Peel the sweet potatoes, cut them in half and with a special grater cut them into thick noodles. Set aside.

Put the noodles, asparagus, garlic and red pepper in a medium-sized pan over medium-high heat. Cook for 3-5 minutes, adding a little water. Add the red pepper and 2-3 tbsp of water, cover and cook for another 3-5 minutes until the noodles are tender. Be careful not to cook them too long.

Season with lemon juice and serve.

Portion for 1-2 people.
