BANANA PANCAKES WITH MAPLE SYRUP AND WILD BLUEBERRIES

Who doesn't love pancakes, especially when they're made with only wholesome ingredients? These delicious pancakes can become a favorite weekend snack to enjoy with family and friends. The main ingredients of these delicious pancakes are wild blueberries, banana, raw honey and maple syrup . Each of the ingredients not only has a wonderful taste, but also has incredible healing properties. Let's look at them.

Wild blueberries help restore the central nervous system and clear viral neurotoxins from the liver. They contain extremely powerful antioxidants that help restore thyroid tissue and reduce the growth of nodules. They also help remove toxic heavy metals from the brain and liver. Ultimately, all this means is that wild blueberries stop the brain and thyroid from shrinking. Bananas provide amino acids and the right kind of potassium to restore neurotransmitters after they have been burned by viral neurotoxins. They are also powerful because of their antiviral and anti-inflammatory properties. Bananas are a great source of calcium as the trees grow in calcium rich soil and are also a great remedy for hypoglycemia as they help balance blood sugar. Method of preparation:

  1. For the batter, mix the bananas, honey, baking powder and sea salt together with the water until smooth. Add the almond flour and potato starch and continue to blend until a thick, homogeneous batter is obtained.
  1. To prepare a pan: Heat 1/2 tsp. coconut oil in a large nonstick skillet over medium-low heat. Pour the batter into the pan, using a full tablespoon of batter to make small pancakes. If necessary, use the back of the spoon to smooth the dough evenly into a circle. Cook the pancakes for 2.5 to 3 minutes, then flip them over and cook for 4 minutes on the other side, until cooked through. Thanks to the banana, the inside of the pancake will stay moist even when it's ready.
  1. To bake in the oven: Preheat the oven to 160°C. Line two baking sheets with parchment paper and lightly coat the paper with coconut oil . With a spoon, spread the dough in the baking trays in the shape of circles. If necessary, use the back of a spoon to smooth the dough evenly. Bake the pancakes in the oven for 8-10 minutes until the edges are golden, then turn them over and bake for another 2 minutes.
  1. For the Wild Blueberry Maple Syrup , combine 1/2 cup maple syrup and 1 cup wild blueberries in a small saucepan over medium heat. Heat the syrup for 3 to 5 minutes, stirring often, until hot and well mixed.
  1. Arrange the pancakes on a plate and serve drizzled with wild blueberry maple syrup.

Advices:

* This batter, while totally delicious, is not the same consistency as a traditional pancake mix. It will be slightly thicker, which means you may need to use a spoon to smooth it into shape.

*Also, the pancakes need to be flipped before they look done. The batter should not tear, so slide the spatula underneath and flip the pancakes before you decide to take them out.

Portion for 16 small pancakes.
