BLACK ELDER SYRUP

How to make black elderberry syrup?

Ingredients:

  • 3/4 cup dried elderberry;
  • 3 cups of water;
  • 3/4 cup raw honey.

Seasonings of choice:

  • 1 cinnamon stick ;
  • 1 whole star anise;
  • ¼ tsp. whole stalks of cloves.

Method of preparation:

Place the dried elderberries and water (with optional spices) in a medium saucepan on the stove. Simmer over medium heat for 45 minutes to 1 hour, until thickened and reduced by half. Remove and cool completely. Strain the syrup through a strainer into a bowl, squeezing the juice from the fruit with a wooden spoon and discarding the whole spices. Mix the syrup with the raw honey and pour into jars.

To maintain health, consume 1 tbsp. per day. For a cold or flu, take 1 tbsp. 3 times a day.
