RAW MINI APPLE PIE TARTS

These pretty little cupcakes are a great snack to fuel your liver and body with the glucose it needs to heal and function. Eat them when you get hungry between main courses, and if you have any left over, store them in the fridge or freezer for a convenient treat.
This recipe is part of the 3:6:9 cleanses of the Healing Medium and is included in the recipes of the book "Cleansing for Health" . Other recipes from these cleanses can be found on our blog as well as in Anthony William's books .
Ingredients:
BASE
- 2 tsp "Medjul" dates, pitted;
- 1 tsp mulberries.
CHARGE
- 3 apples, cored and diced;
- 2-3 "Medjul" dates, pitted;
- 1/8 tsp. cinnamon ;
- a pinch of nutmeg;
- 2 tbsp. fresh orange or lemon juice.
TOPPING
- 1/2 apple, very thinly sliced;
- 1/2 tsp. cinnamon;
- 1-2 tbsp. raw honey (optional).
Method of preparation:
To make the base, blend the dates and mulberries in a food processor.
Take a muffin tin and line each well with a piece of baking paper. Press the foundation mixture into the bottom and sides. Set aside.
For the filling, beat the apples, dates, cinnamon , nutmeg and orange or lemon juice in a blender until smooth. Fill the molds and leave in the freezer for half an hour.
Remove from pan and discard paper. Place the cupcakes on a plate or tray and top with apple slices. Sprinkle with cinnamon and drizzle with honey if desired.
Serve immediately or store in the refrigerator or freezer for later.
Serves 6-8 cupcakes.
