FRESH THAI SALAD WITH NOODLES

This light, refreshing and flavorful Thai noodle salad can be made with zucchini or pea noodles (pea noodles). It combines the different tastes of slightly sweet, slightly sour and slightly spicy, as well as warming ginger and garlic in a dressing that covers all the components of the salad. This recipe is a great solution for a light lunch or dinner.

Chili peppers contain dozens of phytochemical compounds that are beneficial for the liver. One of these compounds is capsaicin, which allows the liver to warm up without negative consequences. The liver welcomes this food-induced heat as it is a recharging factor. The blood brings oxygen through all the capillaries in the liver, and the heat induced by the capsaicin immediately draws fresh, clean blood into the liver by all routes. It's like opening a window at home to air out the stale air and replace it with fresh air. This recharge is helpful for the liver's response to inflammation caused by pathogens and toxins. Try not to eat the peppers green. Always eat them red and well-ripened.

Thai fresh noodle salad

Ingredients: 

For the salad:

  • 120 grams pea noodles (pea noodles) or 2 1/2 cups zucchini noodles
  • 1/2 cup thinly sliced ​​cucumber
  • 1/2 cup thinly sliced ​​bell peppers
  • 1/2 cup thinly sliced ​​carrots
  • 1/2 cup thinly sliced ​​red cabbage
  • 2 sprigs of chopped green onion
  • 1/3 cup mint and/or Thai basil leaves, roughly chopped

For the dressing:

  • 2 tbsp. raw honey
  • 2 1/2 tbsp. lime juice
  • 1/2 tsp. sea ​​salt (optional)
  • 1/2-1 tsp. finely chopped red chilies (use more or less to taste)
  • 1/2 tsp. finely grated ginger
  • 1 small clove of garlic, finely grated

Method of preparation:

If using pea noodles (pea vermicelli), cook according to package directions, drain and rinse under cold water. Set aside until cool.

Mix the dressing ingredients in a small bowl.

Put the noodles you have chosen into a large bowl and add the vegetables, green onions and herbs. Pour the dressing over the top and toss until coated and evenly mixed.

Serve immediately and enjoy!
