RED LENTIL TORTILLAS

These delicious tortillas require just a few simple ingredients and are super easy to make. They go great with any topping, such as fresh salsa, salad, sauteed vegetables, avocado, hummus, lentils or roasted vegetables. Feel free to discover different creative ways you can enjoy these tortillas. They are a great versatile choice for the whole family!
Ingredients:
- 1 1/4 cups red lentils;
- 2 cups of water;
- 1/4 tsp. sea salt (optional)
- 1 tsp freshly squeezed lemon juice;
- 1/4 tsp. garlic powder.
Method of preparation:
Combine all ingredients in the jug of a high-speed blender and soak for 3-4 hours. Blend until very smooth - about 2-3 minutes on high speed.
Place a large ceramic nonstick skillet over medium heat. Pour 1/2 cup of the mixture into the center of the pan and swirl it in a circular motion so that the mixture covers the entire bottom of the pan. Cook for 4-5 minutes on one side until the tortilla starts to pull away from the edges, then flip and cook for another 1-2 minutes on the other side. Repeat these steps with the rest of the mixture.
Serve immediately or store in an airtight container at room temperature with parchment paper between tortillas for 1-2 days.
