ICE CREAM WITH HONEY AND COCONUT

Warning: This ice cream recipe is dangerously delicious! It only takes a few minutes to make with an ice cream maker, and in less than an hour you can make ice cream that is healthier and much tastier than anything you can find in the store. As a bonus, you'll have almond milk left over that you can use in smoothies or drink chilled from the fridge.

Ingredients:

  • 1 cup of almonds;
  • 2 dates, pitted;
  • 1-cm pieces of vanilla seeds, cut lengthwise;
  • 1 1/2 cups coconut cream (from about 2 cans chilled whole coconut milk);
  • 1/8 tsp. sea ​​salt ;
  • 1/8 cup raw honey;
  • 1/4 cup slivered almonds (optional)

Method of preparation:

First, make the almond milk by blending the almonds, dates, and vanilla seeds with 2 cups of water in a high-speed blender until smooth. Strain the mixture through a nut milk bag or tea towel and set aside. Next, open the cans of coconut milk, being careful not to shake them. Separate the heavy cream from each box. In a medium bowl, combine the coconut cream with 1 cup of the almond milk, sea salt , and raw honey. Pour the mixture into the bowl of an ice cream maker and follow the directions for use. Serve the ice cream garnished with crushed almonds if desired and a drizzle of raw honey

*Without an ice cream maker, freeze mixture in a bowl and stir every 30 minutes until set.

Portion for 2-4 people.
