BANANA ICE CREAM WITH WILD BLUEBERRIES

This ice cream is just what you want it to be – creamy, sweet and cold. The best thing about it is that you can enjoy it at any time without fear of delaying your treatment. Ice cream for breakfast? Absolutely! Ice cream for dinner? Why not!? It is also the perfect snack. No matter when you enjoy banana ice cream, your thyroid gland and the rest of your body will thank you for the healing benefits this indulgence brings.

Ingredients:

  • 3 large frozen bananas;
  • 2 cups of thawed wild blueberries;
  • 2 tablespoons of raw honey (optional).

Method of preparation:

Place 1 cup of thawed wild blueberries and their liquid in a food processor along with 2 Tbsp. raw honey if desired. Pulse 5 times until combined. Most of the fruit should remain whole. Set this sauce aside.

Roughly chop the bananas and place them in the food processor along with the remaining cup of wild blueberries. Blend until you get a smooth soft ice cream. If you like, you can put the ice cream in the freezer to harden for 2 hours before removing it.

Serve the ice cream in individual bowls and drizzle with the wild blueberry sauce. Enjoy!

Portion for 2 people.
