ZUCCHINI SPAGHETTI WITH PESTO SAUCE

This Spaghetti Zucchini is a brilliant and delicious way to enjoy so many beautiful ingredients together. The familiar taste of pesto combines with sweet cherry tomatoes and soft spaghetti in a dish that is light, filling and simply put, wonderful!
Ingredients:
- 3 medium-sized peeled zucchini;
- 2 cups of fresh basil leaves;
- 1/4 cup hemp seeds ;
- 1/4 cup walnuts ;
- 1 tsp olive oil (optional);
- 1/2 date ;
- 2 cloves of garlic;
- 1/4 tsp. sea salt ;
- 1 lemon;
- 1/4 cup of water;
- 2 cups cherry tomatoes.
Method of preparation:
Grate the spaghetti squash using a kitchen grater, peeler or julienne knife. Place this spaghetti in a large bowl and set aside. Blend the basil leaves, hemp seeds , walnuts , olive oil , dates , garlic cloves, sea salt and lemon juice with the water until you get a creamy pesto. Pour the pesto over the spaghetti squash and toss until evenly coated. Divide the spaghetti into two bowls. Arrange the sliced cherry tomatoes on top. Serve and enjoy!
Portion for 2 people.
ADVICES:
If you wish, you can use kelp or cucumber instead of zucchini spaghetti.
