VEGAN QUESADIA WITH BROCCOLI AND CHEESE SAUCE

Vegan Quesada with Broccoli and Dairy Free Cheese Sauce! This delicious quesadilla is also low in fat, making it a better choice for a treat. You can use Anthony William's recipe for potato tortillas or use a brand you like that is grain and corn free. They are a great choice for your kids too!

Potatoes: they are rich in amino acids that specifically suppress the growth of viruses. Potatoes are high in glucose, which provides nutrients for the liver, as it relies on it to maintain its strength. It also helps to build up glycogen stores - the very resource that protects us from blood sugar problems, weight gain, fatty liver and dirty blood syndrome.

Ingredients:

  • 1 cup finely chopped broccoli
  • 1/2 tbsp. lemon juice
  • Sea salt , to taste (optional)
  • 1/2 tsp. red pepper flakes (optional)
  • Potato tortillas (or use another tortilla of choice that is grain and corn free)
  • Handful of fresh cilantro, for serving

Cheese sauce recipe (substitute nacho cheese if you like):

  • 1 cup unsweetened almond milk, more if needed.
  • 2 1/2 tbsp. tapioca starch ;
  • 1/2 tbsp. onion powder
  • 1/2 tsp. garlic powder
  • 1/4 tsp. paprika
  • 1/4 tsp. turmeric
  • 1 tbsp. lemon juice
  • 1 tbsp. coconut aminos (optional)
  • Sea salt to taste (optional)

Method of preparation:

Steam the chopped broccoli until cooked. Place them in a medium bowl and add the lemon juice and sea salt (if using). Set aside.

To make the cheese sauce, place the unsweetened almond milk, tapioca starch , onion powder, garlic powder, paprika , turmeric , lemon juice, coconut aminos (if using), and sea salt (if using) in a small saucepan. Mix with a whisk until a uniform mixture is obtained.

Place the pot over medium heat and bring to a boil. Reduce heat to low and reduce sauce, stirring frequently, until mixture thickens - about 1-2 minutes. Remove from heat and set aside.

Place one tortilla on a non-stick pan and add a layer of cheese sauce. Top with 1/4 cup steamed broccoli, sprinkle with red pepper flakes (if using) and another layer of cheese sauce to cover the broccoli. Place another tortilla on top and toast over medium-high heat for 2-3 minutes until browned on the bottom. Flip and cook for another 2-3 minutes or until browned. Repeat with remaining tortillas. Cut the quesadillas into 4 pieces, garnish with fresh cilantro and serve immediately.

Portion for 2 people.
