ASPARAGUS SOUP

If you're looking for different ways to enjoy asparagus, try this nutritious asparagus soup. In this recipe, asparagus takes center stage, while being accompanied by light accents of lemon and herbs that bring out their natural flavor. It is a great and light choice for lunch or dinner, and can also be served with an aromatic salad or with another dish of your choice.

Asparagus provides a wealth of flavonoids, many undiscovered or unexplored, that are highly anti-inflammatory. They act like a natural aspirin and soothe a heated, congested, congested liver. The liver's ability to cleanse itself is greatly enhanced by this calming effect. Asparagus brings order to a chaotic, diseased liver. The liver's immune system is instantly boosted by asparagus. It increases the production of bile, but does not allow the liver to be overworked by this process. Asparagus helps stir up fat cells, flushing them out of the liver and helping to rejuvenate the deep, inner core of the liver. Asparagus is one of the most important foods for liver health. Consider including them in your menu at least a few times a week.

Ingredients:

  • 1 tsp onion or leek, chopped;
  • 3 cloves of garlic, crushed;
  • 2 kg. asparagus, stalks peeled and chopped;
  • 3 hours water or broth "Help for the liver" (wait for the recipe on our blog soon);
  • 1 tsp dried thyme or basil ;
  • 1 tbsp. lemon juice;
  • 1/2 tsp. lemon peel;
  • Peeled asparagus strips, for garnish (optional).

Method of preparation:

Place a large non-stick ceramic pot on the stove over medium-high heat and add the onion and garlic. Cook for 3 to 5 minutes until the onion is translucent, adding a spoonful of water if necessary. Add the chopped asparagus and cook for another 3 minutes, until the asparagus is wilted.

Add the Liver Aid water or broth, dried thyme , lemon juice and lemon zest. Bring to a simmer and cook for 10-15 minutes until the asparagus is tender.

Transfer the soup to a blender and puree until smooth, releasing the steam when necessary (you may need to do this several times). You can also use a blender for this purpose.

Pour the soup back into the pot and bring to a simmer. Taste and adjust the seasoning. Divide it into bowls. If desired, use a vegetable peeler to make strips of asparagus for garnish. Serve immediately.

Portion for 2 people.

ADVICES:

  • If you're eating this soup on Day 9 of the 3:6:9 Simplified Cleanse, skip the asparagus sliver garnish and just enjoy the pureed soup.
  • When choosing between water and Liver Aid broth for ingredients, keep in mind that broth will give a richer flavor. Store-bought vegetable stock is not recommended because it is very difficult to find a variety that does not contain oil, salt, natural flavors and/or other additives. For added convenience, make a batch of the Liver Helper broth ahead of time and freeze it (think ice cubes for easier thawing) to have on hand for recipes like this one.
