These beautiful spring rolls are incredibly fresh and full of life. The sprouts and other healing foods in them will refresh and energize you both physically and emotionally.
You can prepare them with rice paper or choose nori sheets for a grain-free option. You also have freedom in choosing the filling – avocado, mango, sweet potato, or regular potato, according to your taste and preferences.
Sprouts are rich in mineral salts that participate in neurotransmitter production. They support the brain with amino acids and enzymes, remove certain toxic heavy metals (especially cilantro and parsley microgreens), and aid in the recovery and strengthening of neurons – which can be beneficial for conditions like brain fog, memory problems, and other neurological disorders.
Ingredients:
- 6 rice paper wrappers (brown rice) or nori sheets;
- 6 cups sprouts (freely gathered);
- 1 large tomato, cut into strips;
- 4-6 stalks fresh green onions, coarsely chopped, or 1 small bunch wild chives;
- 1 avocado, thinly sliced;
- or 1 mango, thinly sliced;
- or ½ small sweet potato (steamed or baked), cut into sticks;
- or 1 regular potato (steamed or baked), cut into sticks;
- or 1 mango, thinly sliced;
- 4-6 strips Atlantic dulse or 1 tsp dulse flakes (optional);
Dipping Sauce (optional):
- 3 tbsp freshly squeezed lime juice;
- 3 ½ tbsp raw honey;
- ½-1 tsp red pepper flakes;
- 1 tsp finely grated ginger.
Instructions:
If using rice paper wrappers, soak them in water until soft and flexible. If using nori sheets, place them shiny side down on a clean surface.
At one end of the wrapper or nori sheet, arrange a handful of sprouts (about 1 cup).
Add a few pieces of tomato, some fresh green onion or wild chives, your chosen filling (avocado, mango, or potatoes), and dulse (if using).
If working with rice paper:
Fold the ends inward and roll tightly, similar to a burrito.
If using nori, arrange the ingredients at one end, lightly moisten the opposite end with water or lime (or lemon) juice, and roll tightly.
Repeat until all ingredients are used.
For the sauce:
Combine all ingredients and mix well until smooth.
Cut the rolls in half and serve immediately with the sauce.
Serves 2-3 people.
