Layers of rich, fresh blackberry jam, creamy vanilla-flavored banana ice cream, and soft, slightly chewy dried white mulberries combine in this incredibly delicious dessert. Besides looking beautiful, it is also extremely satisfying. You can enjoy it at any time of the day.
Blackberries are rich in various antioxidants, many of which are still not fully understood. Some of these compounds reach the brain directly through the bloodstream, where they help slow down cellular damage and aging processes.
To prepare the jam, place the blackberries and dates in a blender and process for 1-2 minutes on medium speed until smooth. Set aside.
For the banana ice cream, place the frozen bananas and vanilla in a food processor and process until a smooth, creamy consistency similar to soft-serve ice cream is achieved. If necessary, add a little water or coconut water to facilitate blending.
In serving glasses or jars, spoon a layer of banana ice cream, then add some dried mulberries for texture (if using), and on top of them, a layer of blackberry jam. Repeat layering with the remaining ingredients. Finally, garnish with fresh blackberries and drizzle with a little raw honey. Serve immediately.
Serves 2-3 people.
Tip:
When choosing vanilla powder, look for a product with 100% pure ingredients, without added fillers or flavorings.
